Rapid Visco Analyser

 

It is a brand of Kett Electric Laboratory. The Rapid Visco Analyser (RVA) is a laboratory analytical instrument for investigating the viscosity behaviour of starch-containing systems under defined temperature and shear conditions. It records time-dependent changes in viscosity that occur during the heating, holding and cooling of a sample.

The RVA is primarily used to characterise starch gelatinisation, retrogradation and thermomechanical stability. The measurement curves provide important parameters such as the gelatinisation temperature, peak viscosity, breakdown behaviour and final viscosity.

These parameters allow conclusions to be drawn regarding raw material quality, modification, formulation and process control. The data obtained supports the design of mixing, cooking and reaction processes, as well as the assessment of the subsequent product texture and storage stability.
