Which mixing technology is best suited to gentle dry mixing of baking ingredients with sensitive particles, without grain destruction?

There is no universally best mixer technology for the gentle dry mixing of baking ingredients with sensitive particles. What is decisive is the breaking strength of the ingredients, the differences in grain size and bulk density, the proportion of small components, and the required mixing time. The goal is to achieve a homogeneous mixture with minimal mechanical stress and the lowest possible tendency to segregate during discharge, transport and filling.

Typical mixtures contain fine powders such as flour, starch, milk powder, sugar, salt, raising agents and flavourings. Sensitive components such as cereal flakes, nuts, chocolate pieces, freeze-dried fruit, extrudates, herbs or seeds are also often added. Excessive energy input can damage such components. This creates fines and dust. Appearance, texture, flowability and dosability can deteriorate as a result.

Free-fall, drum and container rotation mixers are particularly gentle. The product is circulated predominantly by gravity. The fast-running mixing tools do not intervene intensively in the product bed. These systems are therefore especially well suited to highly breakage-sensitive ingredients. However, the mixing action must be carefully checked with strongly differing particle sizes, bulk densities or very small addition quantities. Segregation can also occur after mixing, for example due to large drop heights or unsuitable conveying paths.

Vertical conical mixers and other vertical precision mixers often offer a good compromise between mixing quality and product protection. The mixing tool conveys the product upward in a controlled manner and lets it sink back down at the centre. At low speeds this produces a three-dimensional restratification that causes comparatively low mechanical stress. Such mixers are suitable for baking mixes, blended flours, and mueslis and cereals with sensitive ingredients.

Horizontal paddle or twin-shaft mixers, on the other hand, are useful where short mixing times and high throughput are required. With suitable tool geometry and reduced speed, they can also process moderately sensitive components gently. Nonetheless, the stress from acceleration, impact and relative movement is fundamentally higher than with pure free-fall systems. For freeze-dried fruit, large extrudates or very sensitive chocolate pieces, the operating point should therefore be determined with the original product.

Ploughshare and paddle mixers can achieve high mixing intensity and are particularly useful for powders that are difficult to mix. For extremely breakage-sensitive ingredients, however, they are usually not the first choice. They should only be used if speed, mixing time and tool geometry are chosen so that the required homogeneity is achieved without unacceptable grain breakage.

Process control is particularly important. Sensitive components are often added only shortly before the end of mixing. Mixing time should be limited to the necessary minimum. Speed, fill level and discharge concept must be designed to suit the specific product. Large, free-falling discharge paths and unnecessary transfer steps should be avoided, since they can lead to segregation and grain breakage.

For particularly sensitive baking ingredients, free-fall mixers or gently operated vertical conical mixers are generally the better choice. Where short mixing times and high throughputs are required at the same time, speed-controlled paddle or twin-shaft mixers come into consideration. The final selection should always be made through mixing trials with the original recipe, in which mixing quality, grain breakage, dust proportion, discharge and segregation behaviour are checked.

Gentle mixing with amixon®

The vertical twin-shaft mixer HM is particularly versatile in the baking ingredients industry. It processes fine powders, coarse particles and sensitive components in a short time. At the same time, fats, shortenings, oils, lecithins, baking extracts, enzymes and liquid flavourings can be homogeneously incorporated.

The HM covers a broad process window: from very gentle mixing with low energy input to targeted de-agglomeration with engageable cutting rotors. The intensive tools act only where required and in a locally limited way. This keeps the base flow for the overall batch as gentle as possible. Variable fill levels and stored mixing programmes support reproducible process control.

KoneSlid®, AMK and Gyraton®

The KoneSlid® KS is suitable for applications in which short mixing times, particularly gentle treatment and rapid discharge are decisive. The mixing geometry supports a homogeneous mixture and swift discharge. This reduces the residence time of sensitive components in the mixer and can lower the risk of segregation during discharge.

The continuous mixer AMK is a solution for continuous production processes. It enables an even product flow with a defined residence time. This is advantageous where large quantities of baking agents, instant products or base mixes are to be produced continuously and gently.

For particularly large batches, the Gyraton® mixing silo is available. It combines mixing, buffering and discharging in a single apparatus. Its large-scale mixing movement allows the homogenisation of large powder quantities at comparatively low energy input. The specific unit size, mixing time and achievable mixing quality are designed according to the recipe and the production task.

Hygienic and easy to clean

amixon® mixers are designed for a hygienic, readily accessible design. The vertical construction allows the mixing shaft to be mounted at the top; a lower product-contact shaft passage is eliminated. Mixing tools welded free of joints and ground smooth, together with large Clever-Cut® inspection doors, make visual inspection, cleaning and product changes easier.
